Each year over 3 million Americans report symptoms of food poisoning. The culprit is usually a bacterium, but viruses and parasites cause some food poisonings.
I really believe that the number of food poisoning cases is actually much higher because most people simply assume that they have an intestinal flu.
About 10,000 deaths a year occur from food poisoning.
The common symptoms are:
- Diarrhea, some severe, leading to dehydration
- Chills, and/or fever
- Abdominal cramps
- Severe headache
- Nausea and severe sensitivity to smells
- Vomiting
Here are the most common types of food poisoning and details:
- Salmonellosis is caused by common bacteria that thrive in livestock/poultry that have been given antibiotics. It causes all of the symptoms mentioned above usually within 6-48 hours after eating the infected food.
- Staphylococcus Aureus is a common staph bacteria found in infected noses and throats. But if a person sneezes on food, then the bacteria produces a dangerous enterotoxin, which specifically targets the cells of the intestine and effectively destroys them. It usually only takes 2-8 hours for the enterotoxin to begin its nasty business.
- Clostridium Botulinum is an extremely dangerous form of food poisoning that is usually known to most people as botulism. Like Staph bacteria, it is not the bacteria itself (found in common soil as spores) that can kill you, but the enterotoxin produced by the bacteria. While Staph attacks and destroys the cells of the intestines, botulism attacks the nerve cells of the body and eventually the person dies from suffocation from not being able to breathe.
- Campylobacter jejuni was once confined to cattle but when people started showing up at doctor’s offices complaining of severe Stomach flu” (after eating undercooked meat) tests were ordered. Thoroughly cooking meat is the only way to destroy this bacterium, which can take up to five days to show symptoms. This form of food poisoning causes all of the above symptoms and a severe bloody stool.
- Giardia is a parasite that attacks the small intestine. It is transmitted by contaminated water, which is why I only eat American vegetables and preferably organic. It can take 2-3 weeks for the cramping, bloating, diarrhea, constipation and abdominal pain to appear. I wonder how many people suffering from Irritable Syndrome are actually infected with the Giardia parasite.
